With thoughts of spring keeping us warm this cold winter, here’s a recipe for a great summer cocktail that was invented last summer at Crotch Lake (itself apparently named after a few drinks) called the Lone Gull Cocktail (named after a previously undiscovered island my fishing buddy and I bravely swam to and seized by force from the eponymous lone gull):
The Lone Gull Cocktail
- 2 parts Sailor Jerry spiced rum
- 3 parts pineapple juice
- Splash of club soda
- Fresh mint
- 1/2 ripe peach
In a highball glass, crush the peach and add ice.
In a shaker, combine the mint, ice, rum and pineapple juice, shake well and strain into the glass over the ice and crushed peach.
Top with a splash of club soda and garnish with fresh mint.
